Why would someone put a Filiberto’s franchise in Anthem?

“We wanted to get away from the middle,” said manager Cesar Valdez, standing outside the new restaurant and pointing toward Phoenix. “There are too many restaurants down there.” Plus, added franchise owner Manuel Cruz, “The people need it here.” The restaurant opened Oct. 13.

On this sunny Sunday, there was just one table open during the lunch hour. What’s the big draw? “Carne asada burritos, made fresh every day,” Valdez said. “And big portions.” Cruz said they hope to serve bottled beer after a couple months, and outdoor seating is planned.
